The business case
An email address is the one piece of contact information the algorithm can't take away from you. Asking for it inside the conversation — while they are already talking to you — converts far better than sending someone off to a form they have to fill in alone.
The ask step waits for their reply and checks it really is an email before saving it to the contact, so you don't end up with a list of "sure!" and "thanks". A wrong answer is asked once more; anyone who says stop is taken at their word and the flow ends politely.
